No-Bake Carrot Cake Pops

Turn your favorite cake into a bite-sized, easier-to-make treat for you and your kids.

Ingredients
 
 

  • ½ cup dates
  • ½ cup shredded carrots (W if you buy whole and shred yourself)
  • ½ cup pecans
  • cup desiccated or shredded coconut
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. sea salt
  • Lollipop sticks
  • Greek yogurt optional, to dip

Instructions
 

  • In a food processor, combine all ingredients and process until smooth.
  • Chill dough in the refrigerator for 15 minutes.
  • Roll dough into small balls and pop them onto popsicle sticks.
  • If desired, serve with a side of Greek yogurt as dip.

Notes

  • For a fun variation, roll cake pops into coconut flakes or chopped nuts.
