½cupshredded carrots(W if you buy whole and shred yourself)
½cuppecans
⅓cupdesiccated or shredded coconut
1tsp.vanilla
1tsp.cinnamon
1tsp.nutmeg
1tsp.sea salt
Lollipop sticks
Greek yogurtoptional, to dip
Instructions
In a food processor, combine all ingredients and process until smooth.
Chill dough in the refrigerator for 15 minutes.
Roll dough into small balls and pop them onto popsicle sticks.
If desired, serve with a side of Greek yogurt as dip.
Notes
For a fun variation, roll cake pops into coconut flakes or chopped nuts.
