½Tbs.garlic powder
¼tsp.salt
¼tsp.pepper
¼tsp.paprika
¼tsp.ground cumin
¼tsp.ground coriander
2Tbs.olive oildivided
Instructions
Preheat the oven to 350 degrees F / 177 degrees C and line a baking tray with parchment paper or aluminum foil.
In a large bowl, mix all of the spices together. Toss the okra in the spice mixture. Add 1 tablespoon of the olive oil to coat the okra.
On the prepared baking tray, place the okra in a single layer. Drizzle with remaining 1 Tbs. of olive oil.
Bake for 15 minutes. Remove the tray from the oven to stir the okra pieces. Bake for another 10 minutes or until crisp.
Notes
You may adjust the spices to your liking and omit additional spices beyond garlic, salt and pepper.
Cooking in an air fryer may expedite cooking times; watch to ensure the okra does not burn.
Ensure space between the okra on the tray to prevent the okra from steaming and getting soggy.
This recipe will keep in the fridge for 3 to 4 days and makes a perfect crispy side to go with a sandwich or wrap.
