Egg and Chips

Repurpose leftover fries into egg and chips for an easy, kid-friendly meal any time of the the day.

Ingredients
 
 

  • 1 Tbs. butter
  • 2-3 oz. leftover fries
  • 2 eggs (W)
  • Salt and pepper to taste

Instructions
 

  • In a small pan over medium heat, heat butter until melted.
  • Add the fries and sauté them for 2 minutes.
  • In a bowl, crack 2 eggs, add salt and pepper, and beat the eggs with a fork.
  • Once beaten, spread the fries in the pan. Pour the eggs over the fries and cook on low-medium heat for 2 minutes. Flip the egg and chips over to cook evenly on both sides.
  • When done, transfer the egg and chips to a plate and cut into quarters.

Notes

  • For variations, you can add seasonings and vegetables, like onions and bell peppers.
