“I don’t like peanut butter anymore,” said my seven-year-old. My worst nightmare! Peanut butter and jelly is my go-to lunch, and I could see that my child was burnt out. It was fair, I served a lot of peanut butter and jelly. I wasn’t sure what to make in its place, though.

Sometimes we just need some new ideas.

From fish stick po’boys and albondigas to kimchi rice cakes and coconut rice - across each home, the lunchboxes look different. That’s why I went to our Kids Eat in Color community and brought together 11 of our parents and caregivers to share their favorite recipes and help inspire lunchboxes everywhere.

“Lunchboxes” is a collection of lunchboxes that represent our Kids Eat in Color parent community. Our team (and kids!) tested these recipes, our Registered Dietitian Nutritionist approved them, and I love them.

So whether you are staying up late or waking up early to pack up lunches, I hope this collection helps you all year long.
