Melt butter in a pan and saute leftover fries for about 2 minutes.
Meanwhile, beat eggs in a bowl with salt and pepper.
Spread out fries evenly in the pan and pour over beaten eggs.
Cook on medium-low for about 2 more minutes on both sides.
To serve, cut mixture into quarters.

Repurpose leftover fries into egg and chips for an easy, kid-friendly meal any time of the the day.
In a small pan over medium heat, heat butter until melted.
Add the fries and sauté them for 2 minutes.
In a bowl, crack 2 eggs, add salt and pepper, and beat the eggs with a fork.
Once beaten, spread the fries in the pan. Pour the eggs over the fries and cook on low-medium heat for 2 minutes. Flip the egg and chips over to cook evenly on both sides.
When done, transfer the egg and chips to a plate and cut into quarters.
Notes
For variations, you can add seasonings and vegetables, like onions and bell peppers.
